Visitor

With the heat scorching the last week we had a little visitor visit.

This little fella or lady not sure lol must of come in  for a drink from my garden that was just watered.
Scared the Jeepers out of me
as i don't often see a lizard this large in town it was just over a foot.

I didn't dare show the boys or it will still be here as a pet.

Aussie Pride

28yrs 11 hrs and 5 minutes ago i was born on this day.

BIG Boy

This is MR 1 the youngest of my 3 boys.
All grow up nearly.
He thinks its about time his mummy lets him feed himself now.
Lets see.

 Yep i reckon he knows what his doing.

Yep and he didn't even make a mess.
I think his mummy will let him feed himself .
oh i cant beleave he is becoming a BIG boy :(

BBQ

Most of last week we had a BBQ for dinner and the hole family
 loved it.

I made the tomato onion and feta salad
Using some of my basil marinated feta i did back HERE
and is was so good i didn't have too add anything else to it as the flavors work awesome together.

Cabbage rolls

I love cabbage rolls i have had them ever since i can remember
So when i order THIS little beauty


I had to try to make them for myself
I just made my own version up
with mince rice herbs and spices tomato's cooked in a tomato juice
so check these baby's out
 I boiled the cabbage just so i could pull the leaves off.
 I let them cool.
This is my first layer.
i got 4 rows in total
1st step

So here's my last layer.
You just got to make sure you pack them in nice and tight.

I boiled them for an hour and a half and on a low heat. 
Now they tasted really good but i have a few improvements to do.

They where alright for a first try :)

Our Animals


Here are some pics of our little herd and horses.

Here is some of the last calves born
The smallest is from the first set of calves born.
We where very excited about this little fella.



Here is most of our cattle we have 21 cows + our bull.
We started off with 12 and lost 4 to bloat very sad :(
We sold 3 steers back HERE
And are awaiting the rest of our calves from our first lot of calves born very exciting.
Funny thing was i didn't want cattle to begin with but its been something that rob has wanted to do for a long time so i went along with it and i tell you what I'm glad i did.

Although he doesn't do much with them these day
but back in the day.
He used to steer wrestling with 2 of these horses
Not the little brown and white one though that's the boys horse lol.

Moussaka

OH MY this is one of my many favorite Greek foods
My mums is the best at making this
but I'm second behind her well i like to think i am anyways lol

Delicious layers of vegetables  and mince
So it starts off  with potato then a mince sauce ,egg plant and mince sauce again  zucchini, mince sauce potato for the final layer of veg top with the yummiest white sauce......

We came across this nest at my cousins house and the boys just loved checking out these little birds.
Bayley wanted to have a hold lol but i told him that if he were touch them the mother would attack him so he said OK we will just leave them there smart thinking.

CALAMARI RINGS

I brought some squid from the supermarket frozen and it was 5 dollars a bag.
Bayley just Love's calamari rings so i figured i would make my own and i get triple the amount in making my own then buy the pre made ones.

I made my own crumb an added some herbs and spice.
I used a pair of scissors to cut the squid into rings then
dip them in flour 
and in an egg wash
then in my crumb
 I fried them in a shallow pan of oil just so they were covered on a high heat for about 2 min
They were so yum even Jordan ate them we just called them fish rings as that's all Jordan eats is fish lol

Growing goodness

Well my garden of herbs and few veg and fruit are growing great now

 Tomatoes
 My thyme basil and parsley are growing like crazy
 Raspberries are all over the bush now
Shallots are doing well
 My capsicums have just started to grow Finlay not sure if they are late Bloomer's or not in season hmm.

Donation

So the girls and I decided at work tonight that any tips that go in to our tip jar we will donate to the flood victims.

Good work girls where already @ $20 on our first night
love this little town we live in everyone is so giving...

Marinated feta

One of my favorite cheese is FETA.
My cousin told me about this yummy feta a while ago that was marinated with sun dried tomato's in oil. 
So i had to try it.
I headed down to the shop where it was stocked and bought myself a jar.
ooh my
I fell in love it tasted so good only problem was a jar would last me two days and it cost $15 a jar well worth it but a bit costly.
If we were to buy feta in bulk we could marinate it our self.
So that is what we did the SIL and I.
When i went to Sydney i bought 2kg back with me
that was the first attempt.
And it was that good we had to do it again.
At 7.99 a kilo i walked out of the shop with 4 kilos 2 for me and 2 for the SIL.
Now that's a saving.
Where just feta crazy lol.

 I marinaded 8 jars.
First i soaked my feta over night in a solution of half milk and half water just to draw some of the salt out i then drained it and dried the feta with paper towel
THEN the fun began
1st one is chili, 2nd i made a pesto up and added it in, the next 2 are basil, the 5th one is olive and garlic, 6th is thyme and garlic and the last one is sun dried tomatoes.
I used vegetable oil in these as the last time i used olive oil it congealed in the fridge.
So time to marinate for a week and a bit and the should be done but the longer there left there the better they taste.
YUMMO cant wait.

A friend of mine has just found out that a former Cobar resident and family has be evacuated from there home in Queensland she has also started to raise some money too help them out.  
Its great too see a lot of other fundraisers out there to lend a helping hand.

 Very sad what is happening out there

Pop's Birthday

Now i got a bit inspired with this cake from here you see i was too sick to go to my nephews birthday and i missed out on THIS oh my it looked so yum.
So i had an idea the boys would help make on for pops birthday. lol
And that they did.
We made a 4 layer cake out of 2 packet cake mixes and separated it in to 4 equal parts and the four colours to each one then baked them.
So we let these cool over night.
Then we added jam and cream to each layer.

Iced it with a butter icing with a dash of blue colouring.
And there you have it lol
Well the kids loved it lol

Too The Market

Around 2 years ago we bought our first lot of Cows in calf we lost a few to bloat but after all we had 8 little healthy calves out of them we got 3 steers
 Those 3 steers went to market last Friday
YAY it only took  2 year lol too make some money off them we did very well
Got $2.15 a kilo so in all about $2.500 witch will go back into the cattle but now that we have more sets of calves more will be going to the market real soon.

Christmas 2010

So where back from our holiday away and now can blog about the past few weeks.
So first off is Christmas day.

now was time to start unwrapping all the presents
 The boys also found these outside from Santa

Bailey now has his own motorbike for out bush
And this is for the three of them but Jordan is going to do all the driving.

So there is present time out of the way now for lunch.
This year i was ment to tone it down a little and not cook so much but of course that didn't work we end up with that much yummy food.
so here's a peak on some of the food we ate on Christmas day.
